Steak Dinner59 viewsThis is in the book. And it's EASY. That's a two-pound dry-aged prime rib eye, with a perfect baked potato (salted jacket, garlic butter, sour cream). There's garlic butter on the steak, too. On a piece of meat like this, steak sauce would be a sin. The beverage is a home-brewed ale (also in the book).
Steakhouse owners are pathological liars. There is nothing special about their meat or their equipment. You can cook better food at home, fast and easy, for half the price. And very little cleanup.

Smoke Box Preparing for Test34 viewsThis is what it looks like inside. I welded three tabs of steel inside to hold up the mesh. There's a smaller piece of mesh in the bottom to keep charcoal up off the steel.
And no, the mesh doesn't collapse when it gets hot.
Cutting the mesh with a grinder was no fun. Use a plasma cutter.

First Version With Chris Muir Cover7 viewsI couldn't choose the cover art for the new book. To me, the official cover will always be the one with the drawing by my friend Chris Muir. Here it is. You can see Chris's online comic strip, Day by Day, at daybydaycartoon.com.

Second View50 viewsFrom Val, specs: "Pig roaster specs:
Works both with charcoal and gas. Has two large gas thingies inside at ends/bottom.
Has a 1 hp, reduces rpm electric motor rotisserie at about ¼ rpm. The rotisserie can be used with stuffed pig or with flat/opened pig.
Has numerous ways to open: drawer at front bottom for either coal or wood chunks. Opens entirely – like a casket – at top or has drawer at top front for delicious pig viewing.
Holds propane tanks and has wheels and ____ing trailer hitch.Jul 17, 2008

Used Butter to Fix Grocery Store Shredded Cheese22 viewsI had a bag of Sargento low-moisture part-skim mozzarella, and I NEEDED a pizza, but I knew the cheese wasn't that great. It burns and tastes like vinyl. I added 3 tablespoons of butter to 12 ounces of cheese (by weight), and I worked a miracle. There was very little burning, and not much oiling off.Jul 17, 2008
